Grilled Grapefruit Juice for Roasted Grapefruit Gelee

I've always been a huge fan of grilling citrus and then juicing to add more depth to a dish.  Here I've grilled some grapefruits and zested the outer skin.  I'm cooking the juice down with red wine, herbs, sugar, lime juice, and salt.  I will make the gelee by adding some agar agar and allowing the mixture to set in the cooler.  I will post the dish later once I get it ready for service tonight.
